Local NC flounder filet, expertly fileted, de-boned and cleaned, it is then topped with a roasted pistachio, cashew and sunflower seed crust. Pair with a simple Basil Pesto Cream for an amazingly easy and healthy restaurant inspired dinner at home.

Cooking Instructions: In a large sauté pan, heat vegetable oil over medium heat. Carefully place the filet, topping side down, into the oil. Sauté for only about 30-45 seconds, just long enough to brown the topping. (Be careful this will happen very quickly). Carefully flip the filet over to the skin side, and continue to cook through.(About 5 minutes). Enjoy!
